Roasted rice flour, commonly known as Thính, is a spice in Vietnamese cuisine. Typically, Thính is obtained by baking rice until golden brown and then churning it finely. In some places it is done by baking crispy rice paper and then finely tapping. There are also types of Thính that are not made from rice but from corn or yellow sesame. Thính is an essential ingredient in many dishes, especially Nem tai (Pig Ears with Lime Leaves)
Thính has a very attractive aroma, which is why many fishermen also use it as bait for luring.
