Massaman / Matsaman paste is a popular spice paste, derived from Thai cuisine, used to prepare curry dishes. Much milder than the red and green varieties, and at the same time clearly sweeter in aroma, it is a kind of bridge between Indian and Thai curry. Composed primarily of red chili pepper, garlic, shallots, cumin and coriander, and eagerly combined with turmeric and cinnamon, it goes wonderfully with delicate meats and vegetables, such as potatoes, sugar snap peas, carrots or broccoli.
