Szechuan pepper (Szechuan pepper or Chinese pepper)
Szechuan pepper has a sharp flavor with a hint of citrus. It causes a feeling of numbness and tingling in the tongue. Used in Asian cuisine, especially in Sichuan Province, as a seasoning for chicken and duck. Along with star anise, fennel, cloves and cinnamon, it is part of the Chinese five spices. It is also used in the Japanese blend of the seven flavors of shichimi tōgarashi. Roasting brings out its aroma.
