Annatto is an orange-red spice and food coloring derived from the seeds of the achiotic tree, which is native to tropical regions from Mexico to Brazil. It is often used to give food a yellow or orange color, but sometimes also for its flavor and aroma. Its aroma is described as "slightly peppery with a hint of nutmeg" and the taste as "slightly nutty, sweet and peppery".
