A traditional dashi bouillon is made by adding Bonita flakes (Katsuo Bushi) to this Kombu (seaweed / kelp) and letting it soak into a delicious, rich, bouillon. You can also add extra ingredients such as soy sauce, sugar or shiitake to deepen the flavour. Dashi is the basis for many Japanese dishes and is so popular because of its delicious umami flavour. Umami is the '5th taste' and translates best as a savoury taste that arises from glutamate (which is abundant in both kombu and bonito flakes). Kombu is a seaweed (brown seaweed) which is mainly harvested in Japan.

-Kelp is a kind of sea plant that's a key ingredient in broth bases of many Korean soups and stews and gives the broth a delicious and complex umami-rich flavor.
-We select only the best raw ingredients from each harvest season for our dried kelp. Raw kelp is showered and cleaned before being naturally dried by sunlight.
-Sempio dried kelp has a green color, is thick & shiny in look, and smells of the sea. It is evenly coated with the white powder that naturally resides on the surface and gives broths a great, umami rich flavor.
-A white powder natural forms on the surface of the kelp during the drying process that makes broths more delicious. When using the kelp for cooking something other than soup, brush off the white powder either by rinsing briefly in water or by wiping it off with a paper towel.
